olivesProvisions International carries a large collection of excellent quality single estate olive oils. Artisan made in small quantities, some of these oils are organic, some are unfiltered, but all are of exceptional color, aroma, character, and flavor.

Our Italian oils are from Tuscany, Sicily, Abruzzo, Liguria, and Umbria. We have Spanish oils from Catalonia, Extremadura, Andulusia, La Mancha, and Murcia. We carry extra-virgin oils of Portugal, Greece, Tunisia, Australia, France, and the United States. In addition we offer a multitude of fruit and nut oils. The Mediterranean and its rocky hills have proved hospitable to many varieties of fruit and nut trees - walnuts, almonds, hazelnuts, pinenuts, and pistachios all possess their own distinctive flavor when pressed. We have many choices of each.

From the citrusy Agrumato oils of the Abruzzo, to Austrian Styrian Kürbiskernöl, to excellent French nut and infused oils, and light Italian grapeseed oil, our range of oils reflects the unique and distinctive nature of the entire Provisions International product line.

Vinegar is now regarded as a complex and sophisticated liquid that lends its particular signature to a range of dishes, both savory and sweet. There is the thick, deeply flavored balsamic that comes from Modena, Italy. It is made from the must of Trebbiano grapes and aged to perfection over years in wooden casks. Spain produces an amber colored sherry variety through the Solera method that uses 500 liter American oak barrels to age sherry wine into a distinctively dry and nutty vinegar. France has its Orlèans method which uses fully developed wine to produce smooth and layered vinegars. We carry these as well as some extraordinary fruit and vegetable vinegars, ice-wine vinegar from Minus8 in Quebec, Saba, Vincotta, and Verjus – all add a touch of piquant acidity or complex mellow sweetness.
